Red Yeast Rice is the product of fermentation of non-glutinous rice with various strains of the yeast Monascus purpureus (Went). Much scientific research has been done on this substance. One constituent of Red Yeast Rice, Monacolin K, has been shown to inhibit the action of liver enzymes, responsible for manufacturing cholesterol in the body. Monacolin K is the same substance that is found in several cholesterol lowering pharmaceutical medications, although the amount in Red Yeast Rice (about 2% in 5mg) is much lower than the amount found in pharmaceutical medications (20-40mg per capsule).
