Maitake Mushroom (Grifola frondosa) is also called king of mushrooms, dancing mushrooms, hen of the woods, and cloud mushroom. The maitake mushroom has been used as a food for thousands of years. During ancient times the maitake was used as currency, and Asians who acquired this mushroom were believed to have “danced with joy” because of their apparent good fortune. The genus and species name, Grifolia fondosa originated in Italy, where it is prized as a delicacy.
